The Best Chocolate Peppermint Oreo Bark

This Chocolate Peppermint Oreo Bark is topped with crushed Oreos and crushed candy canes.  It’s the perfect Christmas treat that is beyond easy to make and only features 5 ingredients! Can easily be made gluten and dairy free!

I cannot believe that we are already into December with less than a month until Christmas.  The air where I am is turning frigid and the snow has already started to fall.  It is bulky sweater and fuzzy socks weather and all things peppermint season!


In my opinion, chocolate mint is the second best flavor combination (right behind chocolate peanut butter 😉). It’s refreshing and the flavors pair wonderfully together, especially around the holiday season.  And what’s better than chocolate and peppermint? Chocolate, peppermint and oreo!  After a long wait, Nabisco finally came out with gluten free Oreos and let me tell you- you cannot tell the difference!  They are sooo good.  They make a perfect treat for anyone.


This chocolate peppermint oreo bark features not only a layer of semi-sweet chocolate, but also a layer of white chocolate.  If you are dairy free, then you will know that white chocolate is basically nonexistent.  It’s essentially made up of milk and confectioners sugar. It’s easier to make milk chocolate and dark chocolate without dairy, but white chocolate is a challenge.  Until now! 

 
I use the brand Pascha (it’s the only dairy free white chocolate in any store around me).  I recommend baking with it because when it’s mixed with other sweeteners, it tastes more like white chocolate, than eating the plain chocolate chips. It melts great (probably easier than regular white chocolate which burns very, very easily) and it cooks great too! A perfect dairy free white chocolate substitute. Finally!

Ingredients:

Dairy Free Semi-Sweet Chocolate Chips- I used Trader Joe’s Semi Sweet Chocolate Chunks, but you can use any that you have on hand.  I also love the Enjoy Life Semi Sweet Chocolate Chips.  You can use normal chocolate chips if not dairy free.


Dairy Free White Chocolate Chips I used the brand Pascha for this recipe, but if you aren’t dairy free then feel free to use normal white chocolate.


Coconut Oil for this recipe we melt the chocolate with a little bit of coconut oil to help it stay smooth and spread easily.  I recommend using a naturally refined coconut oil so that there is no coconut taste or aroma.

Peppermint Extract optional but it’s a great festive flavor booster.


Gluten Free Oreos- cause why not 😉.  They are a fun addition and add a great crunch to this bark.  Can sub normal Oreos if not gluten free.  Mint ones would be fabulous.


Crushed Candy Canes I crushed my own using a ziploc and a hammer.  I recommend doing this on the ground or concrete.  Beware of any holes that might happen from hammering the ziploc.  It can create a mess if you don’t know there’s a hole!

Tools to make this chocolate peppermint Oreo bark:

  • Heavy Duty Non-Stick Aluminum Foil– its a pricier tin foil but non stick is crucial in this recipe because it makes it or breaks it. You don’t want tin foil in your chocolate!
  • Spatula
  • Glass Bowls
  • Ziplocs
  • Hammer- or something to crush your Oreos and candy canes

How to make this chocolate peppermint Oreo bark:

Line a cookie sheet

Line a cookie sheet with heavy duty non-stick aluminum foil (make sure it’s nonstick!).  Create 1/2″ tall walls with the aluminum foil to keep the chocolate from running outside of the foil.

Melt the semi-sweet chocolate

Pour the semi-sweet chocolate chips into a microwave safe bowl.  Add half of the coconut oil.  Microwave until melted in 30 second intervals, stirring after each round.  Add the peppermint extract if desired and mix well.

Create the semi-sweet chocolate layer

Pour the melted chocolate onto the aluminum foil lined pan and spread with a spatula to create an even layer.  Place in the fridge until hardened.

Melt the white chocolate

Pour the white chocolate chips into a microwave safe bowl and add half of the coconut oil.  Microwave until melted in 30 second intervals, stirring after each round.

Crush the Oreos and candy canes

While melting the white chocolate, place the Oreos into a ziploc bag and seal them.  Gently take a hammer and crush the Oreos into little pieces. Repeat with the candy canes.

Create the white chocolate layer

Pour the melted white chocolate over the hardened semi sweet chocolate and spread into an even layer, mirroring the semi-sweet layer.

Sprinkle

Sprinkle the crushed Oreos and candy canes over the chocolate.

Harden in the fridge

Place in fridge and let harden all the way through.

Break the bark into pieces

Once hard, remove from the fridge and break into pieces. 

How to store this Chocolate Peppermint Oreo Bark:

This chocolate peppermint bark can be store in an airtight container at room temperature for up to 10 days. You can also keep it in the fridge for 2 weeks in an airtight container and in the freezer for 2 months in an airtight container.

I used these containers to store the chocolate bark.

  • 2 bags (14.2 oz) dairy free white chocolate – I use Pascha’s Vegan White Chocolate

  • 2 teaspoons coconut oil

  • 1/4-1/2 teaspoon peppermint extract *optional*

  • White Chocolate Layer
  • 2 bags (20 oz) dairy free semi-sweet chocolate*

  • 2 teaspoons coconut oil

  • Toppings
  • 12 Oreos, crushed – I used gluten free Oreos

  • 1/4 cup crushed candy canes (about 3-4 regular or 8-10 mini candy canes)

Directions

  • Line a cookie sheet with heavy duty non-stick aluminum foil (make sure it’s nonstick!).  Create 1/2″ tall walls with the aluminum foil to keep the chocolate from running outside of the foil.
  • Pour the semi-sweet chocolate chips into a microwave safe bowl.  Add 2 teaspoons of coconut oil.  Microwave until melted in 30 second intervals, stirring after each round.  Add the peppermint extract if desired and mix well.

  • Repeat with the candy canes.
  • Pour the melted white chocolate over the hardened semi sweet chocolate and spread into an even layer, mirroring the semi-sweet layer.
  • Sprinkle the crushed Oreos and candy canes over the chocolate.
  • Place in fridge and let harden all the way through.
  • Once hard, remove from the fridge and break into pieces.  Enjoy!

Notes

  • Chocolate is very easy to burn, so make sure to stir vigorously after each 30 seconds.  As you stir, the chocolate will melt more and more.  Once your chocolate has become stiff from being in the microwave, it has burned.  Let cool down and test the taste to see if it is salvageable.
  • Pro tip: Dark chocolate is the hardest to burn, milk chocolate the next and white chocolate burns very, very easily!
  • *I kept the ratios of the chocolate as displayed in the recipe card, meaning there was slightly more semi-sweet chocolate than white chocolate. If you want them even, reserve about 1/3 cup of the semi-sweet chocolate.
