Super Fudgy Cookie Dough Protein Balls

These cookie dough protein balls are a great source of protein all while tasting like candy! With just 5 main ingredients of dates, peanut butter, oatmeal, protein powder and almond milk these cookie dough protein balls are super easy to make for a quick snack on the go or enjoy them for a post workout snack.

I know for a lot of us life can get super busy quick and having healthy snacks on hand already prepared is a life saver! These take less than 10 minutes to come together and you can always soak the dates over night to save more time.

These protein balls are the easiest snack to keep on hand. Not only are they packed with protein but they taste like a candy bar! They’re super fudgy and similar to a soft nougat. You can completely blend all the ingredients together to make a consistently fudgy texture, or you can add some rolled oats after blending to add some texture.

These protein balls are made with just 8 ingredients, and I bet you already have them in your pantry. So what are you waiting for?

Dates

Oat Flour*

Rolled Oats – make sure they are gluten free

Peanut Butter- or a different nut butter

Protein Powder- I used chocolate but feel free to mix it up and try other flavors!

Pure Vanilla Extract

Salt

* I love to make my own oat flour by blending gluten free rolled oats in a blender until they reach a super fine consistency. I then seal the oat flour in an air tight container in my pantry.

How to make:

Soak

Soak the dates in hot water for 30 mins. Remove the pits.

Blend

If desired, reserve half of the rolled oats, 1/4 cup, for added texture. Blend all ingredients together in a food processor.

Fold

Fold in the remaining rolled oats for desired texture.

Roll

Roll mixture into 1″ balls and place on parchment lined tray.

Refrigerate and Store

Refrigerate balls for 20 mins and then transfer to container to store in the fridge.

Enjoy

Enjoy refrigerated protein cookie dough balls for up to a week in the fridge.

Ingredients

  • 12 Medjool dates- pitted

  • 1/2 cup rolled oats – reserve half if desired for texture

  • 1/2 cup oat flour

  • 1/2 cup plant based protein powder – I used chocolate

  • 1/2 cup peanut butter – or any nut butter

  • 1/2 cup almond milk

  • 1/2 teaspoon vanilla

  • 1/8 teaspoon salt

Directions

  • Soak medjool dates in hot water for 30 minutes. Drain water and remove pits.
  • Reserve half of rolled oats for desired texture. Blend the rest of the ingredients together in a food processor until well blended.
  • Fold in the remaining rolled oats for desired texture.
  • Roll mixture into 1″ balls and place on parchment lined tray.
  • Refrigerate for 20 minutes then transfer to container for storage.
  • Enjoy cookie dough protein balls in the refrigerator for up to one week.

Notes

  • 1. If gluten free, make sure rolled oats are certified gluten free to avoid possible cross contamination.
  • 2. I used a chocolate plant based protein powder in these balls, but different flavors would also work. If you try other flavors let me know!
