These Strawberry Shortcake Bites are the perfect bite-sized treat for any dessert or brunch during strawberry season. A gluten free bite sized shortcake is dolloped with dairy free whipped topping and topped off with a slice of strawberry.
These Strawberry Shortcake Bites could not be easier to make. They’re a great dessert or brunch item for spring and summer. They’d work great for Mother’s Day, Easter, a bridal shower or even Memorial Day or 4th of July. You could alternate with strawberries and blueberries to get a red, white and blue patriotic dessert!
There’s minimal ingredients in these Strawberry Shortcake Bites. You most likely already have all the ingredients in your pantry! They look beautiful and fancy, but the truth is they’re super easy and quick to whip up! What’re you waiting for?

Ingredients in Strawberry Shortcake Bites:
Shortcake:
Almond Flour– use blanched almond flour over unblanched. The taste is sweeter and cakier than unblanched since it’s ground almonds without the skin.
Sugar- you can use any granulated sugar here. I used cane sugar to keep these shortcakes whiter and closer to their original color. Coconut sugar is another great option, but will change the color of the shortcakes.
Baking Soda and Salt- this helps with the rise and flavor.
Butter- instead of the traditional shortcake method of cutting frozen or chilled butter cubes into the dry ingredients, we are melting the butter and adding it in.
Vanilla Extract– use pure vanilla extract here, its a game changer. The vanilla provides a nice warmth of flavor to these shortcakes.
Toppings:
So Delicious Coco Whip- you can use Light or regular in this recipe. I absolutely love this brand and their Whipped Topping. Same exact consistency as Cool Whip. I find it in the freezer section at my local Wegmans.
Strawberries- you can use any berry in replacement of strawberries. Or, you can make various ones with different fruit toppings such as strawberries, blueberries, raspberries and blackberries.
Tools needed to make Strawberry Shortcake Bites:
- Measuring cups
- Measuring spoons
- Glass bowls
- Wooden spoon
- Parchment paper
- Cookie sheet
- Biscuit/Cookie Cutter– I used this exact set and used the 1.1 inch one (second smallest). This way I had perfect circles for the bites. You can also do this by hand, but I do recommend using a cutter. I also use this set and the bigger cutters, to make my cookies perfectly round right when they come out of the oven!
- Cooling rack– I love this cooling rack because it is tiered and such a time saver when your making a batch of cookies that yields 24 or more.
- Spoon- to dollop the whipped topping onto the shortcakes.
- Toothpicks- I used regular old toothpicks but you can use a fancier toothpick if this is for an event or party.
How to make Strawberry Shortcake Bites:
Make the shortcake dough: Combine the dry ingredients together in a bowl and then add the melted butter and vanilla and mix well until a dough forms.
Roll and cookie cutter: Roll the dough out until it is about 1/4″ thick. Use this 1.1 inch cookie cutter to cut the dough into shortcake bites. Transfer to the parchment lined cookie sheet. Repeat until all the dough is used up.
Bake, cool and top: Bake according to the recipe card instructions below. Let the cookies cool completely, using a cooling rack. Once cool, top with a dollop of So Delicious Coco Whip or dairy free whipped topping. Slide a toothpick through a sliced strawberry and then through the whipped topping and shortcake. Slide the strawberry down the toothpick if needed to rest on top of the whipped topping and shortcake, careful not to squish the whipped topping.

Ingredients
- Dry Ingredients
1 1/4 cup blanched almond flour
2 Tablespoons granulated sugar or coconut sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
- Wet Ingredients
1/4 cup melted dairy free butter
1/4 teaspoon vanilla extract
- Toppings
So Delicious Coco Whip or dairy free whipped topping
6 Strawberries, sliced
Directions
- Preheat the oven to 350 degrees.
- Combine the dry ingredients together in a bowl and then add the melted butter and vanilla and mix well until a dough forms.
- Roll the dough out until it is about 1/4″ thick. Use this 1.1 inch cookie cutter to cut the dough into shortcake bites. Transfer to the parchment lined cookie sheet. Repeat until all the dough is used up.
- Bake for 13-15 minutes until the edges are just golden. Let the cookies cool completely, using a cooling rack.
- Once cool, top with a dollop of So Delicious Coco Whip or dairy free whipped topping.
- Slide a toothpick through a sliced strawberry and then through the whipped topping and shortcake.
