These ooey gooey S’more Rice Krispie Treats are loaded with graham cracker pieces and mini marshmallows and drizzled with chocolate. These delicious and homemade Rice Krispie treats are a perfect summer treat.

Rice Krispie treats are a nostalgic childhood treat whether they were homemade or wrapped in the blue wrapper. Personally I loved the homemade ones and some of my best memories are when my mom and I made them in our kitchen. She always left a little bit leftover in the pot and on the wooden spoon so I could “lick” the spoon.

My mom made the BEST homemade Rice Krispie treats- they were so ooey and gooey and the taste was better than the processed version. So naturally I asked her for the recipe so that I could recreate those nostalgic treats, but with a summer campfire upgrade.

Two of the best childhood treats- Rice Krispie treats and s’mores, come together in these ultimate S’more Rice Krispie Treats.

Pieces of gluten free graham cracker (you can also use regular graham cracker if not gluten free) and extra mini marshmallows are added to the mixture for the ultimate marshmallowy Rice Krispie treats that are topped with a chocolate drizzle.

I could seriously eat an entire batch myself they are that good. It’s hard to resist extra marshmallow chunks in Rice Krispie Treats- I think we can all agree that it’s the best part and what makes homemade Rice Krispie treats far superior to the packaged versions.

Ingredients in S’more Rice Krispie Treats:

Crispy Rice Cereal- here’s a secret- name brand Rice Krispies cereal is NOT gluten free. It has malt flavor which contains barley. Barley is closely related to wheat so if you are gluten free or have Celiacs then stay away from the name brand! I have found that some off brands are certified gluten free, like Aldi’s Crispy Rice cereal. Plus it’s a great price so its a win win.

Marshmallows- we are using regular sized marshmallows to melt and we’re using mini marshmallows as an add in. I have not tried vegan marshmallows, but you can use vegan marshmallows to make this recipe vegan.

Dairy Free Butter- I used Country Crock’s Plant Butter since it is my go to and all time favorite.

Vanilla Extract the key ingredient for the BEST Rice Krispie Treats! A little goes a long way and vanilla completely elevates your homemade treats.

Gluten Free Graham Crackers my favorite gluten free graham crackers are Kinnikinnick’s Smoreable’s Graham Style Crackers. If you are not gluten free, feel free to use regular graham crackers.

Mini Marshmallows- we’re adding these into the mixture and these add little pockets of marshmallowy gooeyness throughout these Rice Krispie Treats.

Dairy Free Chocolate + Coconut Oil use your favorite dairy free chocolate. Melt it with a bit of coconut oil so that it gets smooth and runny, and we are able to beautifully drizzle it over the top of the Rice Krispie Treats.

Tools needed to make S’more Rice Krispie Treats:

  • Large pot
  • Wooden spoon or silicone spatula
  • 9×13 pan or 9×9 pan- 9×13 will produce a thinner treat with more servings than a 9×9
  • Parchment paper– the trick to pressing the Rice Krispie Treats down mess-free! Some people like to grease their hands and then press down, but using a sheet of parchment paper is so much easier. These treats are extra gooey with marshmallow so pressing down with the back of your spatula or spoon is very tricky to do.

How to make these Rice Krispie Treats:

Melt the ingredients and add the cereal: Over medium-low heat, melt the butter in a large pot. Once melted, add the vanilla and stir together. Add the bags of marshmallows and let melt, stirring occasionally. Once melted together, turn off the burner and stir in the rice crispy cereal.

Add-ins: Stir in the graham cracker pieces and mini marshmallows.

Transfer and press: Transfer to a greased pan and place a sheet of parchment paper over the Rice Krispies and press mixture evenly into the pan.

Drizzle the chocolate: Melt the chocolate and coconut oil in the microwave in 30 second intervals or over a double boiler. Drizzle over the Rice Krispie Treats and let set for at least an hour.

Rice Krispie Treats are best stored at room temperature in the pan sealed with plastic wrap or in an airtight container. They will stay fresh for up to a few days.

Ingredients

  • 1 stick (1/2 cup) dairy free butter

  • 1 teaspoon vanilla

  • 2- 10 oz bags regular marshmallows

  • 1- 12 oz box of crispy rice cereal

  • S’more Add-Ins
  • 1 cup gluten free graham crackers, chopped into pieces

  • 2 cups mini marshmallows

  • Chocolate Drizzle
  • 1 cup dairy free chocolate

  • 1 teaspoon coconut oil

Directions

  • Over medium-low heat, melt the butter in a large pot. Once melted, add the vanilla and stir together. Add the bags of marshmallows and let melt, stirring occasionally to not let the butter or marshmallows burn. Once melted together, turn off the burner and stir in the rice crispy cereal.
  • Stir in the graham cracker pieces and mini marshmallows.
  • Transfer to a greased pan and place a sheet of parchment paper over the Rice Krispies and press mixture evenly into a greased 9×13 or 9×9 pan.
  • Melt the chocolate and coconut oil in the microwave in 30 second intervals or over a double boiler. Drizzle over the Rice Krispie Treats and let set for at least an hour.
  • Cut, serve and enjoy!
