This pie, y’all. Oh my goodness.

I don’t even know where to begin. It has creaminess, it has crunchiness, it has fresh fruit. And it is so, so easy to make.

4th of July is coming up and I am so excited. It’s my favorite holiday and there’s no better way to celebrate something than with food!

This no-bake pie is so easy to make and assemble, and there is no need for an oven. A perfect option for a hot summer day!

For this Red, White and Blueberry No-Bake Pie, I used MI-DEL Gluten Free Graham Style Pie Crust for the ultimate crunchy, gluten free crust. MI-DEL is top 8 allergen free, so no worries if there’s a dairy, egg or nut allergy. This entire pie is gluten, dairy and egg free.

For the pudding filling, I made Cook and Serve Vanilla Pudding with almond milk to keep it dairy free. I then folded in dairy free whipped topping for the ultimate dreamy and creamy pudding center. To top it off, I spread some whipped topping and placed fresh red and blue berries on top.

Topping the pie with berries is one of the most fun parts of this pie (besides eating it!). You can get really creative and make whatever design you want. You can make the American flag, or red, white and blue stripes, a giant star, anything you want!

Happy baking!

Ingredients in Red, White and Blueberry No-Bake Pie:

Gluten Free Graham Cracker Pie Crust- I used MI-DEL Graham Style Pie Crust and it added such a nice crunch to this pie. I opted to go with a graham cracker crust over a regular pie crust and it really made this pie. Plus it’s a fully no-bake pie, even for the crust.

Cook and Serve Vanilla Pudding- make sure you use Cook and Serve pudding mix, and not instant pudding. It will not set. Make sure to follow my directions in the recipe card down below on how to make this pudding dairy free.

Almond Milk- I used almond milk to make the pudding, and have not tried any other non-dairy milks but I’ve read success stories with different kinds.

Dairy Free Whipped Topping- my go-tos are So Delicious CocoWhip and TruWhip’s Vegan version (make sure you get the Vegan version if you’re dairy free because the other ones contain dairy). I used TruWhip in my pie and holy cow. It’s not made with coconut so it really does taste like the real deal. Plus it’s made with real ingredients which I love and prefer to eat. There’s no artificial colors or flavors, no high fructose corn syrup, no preservatives, no hydrogenated oils, and its Non-GMO. And somehow it is so stinkin’ good!

Fresh Fruit- use your favorite red and blue fruits like strawberries, blueberries, blackberries and raspberries.

Tools needed to make this patriotic no-bake pie:

  • Non-stick sauce pan– this is the exact set that I have. My mother in law got this Cuisinart Pot and Pan set for us as a wedding gift and I love it. It truly is non-stick and so, so easy to clean. Melted cheese, melted chocolate, seriously ANYTHING comes right off just with warm water and a sponge (I like to get everything off first with just water and then I go in with soap to clean and sanitize).
  • Whisk
  • Glass bowl or large glass measuring cup
  • Plastic wrap
  • Spatula
  • Cutting board and knife

How to make this No-Bake Pie:

Make the pudding: Make the pudding according to the directions down below. Let cool all the way in the refrigerator for a few hours or overnight and assemble the pie the day of.

Assemble the pie: Once the pudding has cooled, fold in half of the dairy free whipped topping. Transfer to the pie crust and spread into an even layer. Spread the remaining whipped topping on top. Top with fresh fruits in a fun and patriotic design!

How to store this 4th of July Dessert:

This pie is best when enjoyed on the day it is made. I would recommend assembling the pie the day of, but you can make the pudding the day before and let chill in the fridge.

It tastes just as delicious a day or two later, but the graham cracker crust isn’t as crunchy.
