These baked peanut butter oatmeal bars are packed with protein and healthy fats to leave you feeling full for the entire morning. They’re packed with peanut butter and peanuts with just the right amount of sweetness for the ideal breakfast or snack that is easy and quick!

Here’s another fun oatmeal recipe! You can still get the same great benefits from oatmeal without it being boring and bland. Oatmeal not only contains protein and antioxidants, it can also help lower cholesterol. It’s a great balanced breakfast to have since it lowers blood sugar levels so you won’t crash before you get to lunch.

Now let’s talk about the other ingredients in this oatmeal bake. I’ve said it before and I’ll say it again…add-ins are my favorite part of recipes. It’s what keeps the flavors creative and fresh! I’ve added in some unsalted roasted peanuts for added protein and a crunch, but feel free to sub or add more nuts or even raisins! I also added in chia seeds for their amazing benefits- it’s amazing what those little guys can do for your health. And to top it off, I added some dairy free chocolate chips (because why not!).

Ingredients

Peanut Butter– I prefer to use a natural peanut butter, but feel free to use whatever you have on hand.

Maple Syrup– can also sub honey or agave. I am very fortunate that Maple syrup is prevalent in my area so I love to support a small business and I use a local maple syrup.

Pure Vanilla Extract– I love and use this pure vanilla extract. The Madagascar is a serious game changer in any recipe.

Flax Egg– combine 1 Tablespoon ground flax seed with 2.5 Tablespoons of warm water. Set in the fridge for 10 mins.

Salt

Almond Milk– can sub your favorite non-dairy or nut milk.

Coconut Sugar– keeps the oatmeal bake refined sugar free.

Rolled Oats– I use these certified gluten free rolled oats. Make sure you have certified gluten free oats if you are sensitive to cross contamination.

Oat Flour– I make my own by blending these Trader Joe’s Gluten Free Rolled Oats until it reaches a super fine consistency.

Chia Seeds– I have used both whole and ground in this recipe, and both work equally as good!

Baking Powder

Roasted Peanuts– I prefer to use unsalted but if you have and love salted, go for it!

Dairy Free Chocolate Chips– I have used both Enjoy Life Morsels for an allergy friendly alternative and Hu Gems Chocolate Chips for a refined sugar option.

How to make:

Combine

Combine all wet ingredients together in a medium bowl.

Add

Add the dry ingredients to the wet ingredients and mix thouroughly.

Add-Ins

Next add the roasted peanuts and dairy free chocolate chips into the batter and fold in.

Transfer

Transfer the batter into a lined or sprayed 10×7 pan and evenly distribute across the pan, flattening the batter into an even layer.

Bake

Bake for 20 mins at 350 degrees.

  • 1/2 teaspoon salt

  • 2 Tablespoons coconut sugar

  • Dry Ingredients
  • 1 cup rolled oats

  • 1/4 cup oat flour

  • 1 Tablespoon chia seeds

  • 1/2 teaspoon baking powder

  • Add-Ins
  • 1/3 cup roasted peanuts

  • 1/3 cup dairy free chocolate chips (see above for my favorites!)

Directions

  • Preheat oven to 350 degrees.
  • Make flax egg and set in fridge for 10 mins.
  • Combine all wet ingredients together in a medium bowl.
  • Add the dry ingredients to the wet ingredients and mix thouroughly.
  • Next add the roasted peanuts and dairy free chocolate chips into the batter and fold in.
  • Transfer the batter into a parchment paper lined or sprayed 10×7 pan and evenly distribute across the pan, flattening the batter into an even layer.
  • Bake for 20 mins or until the edges are golden.
  • Let cool all the way before cutting to ensure that the bars do not crumble.
