Reasons to love Homemade Butterfinger Balls:

  • Only 4 main ingredients
  • Crunchy, peanut buttery and just downright delicious
  • Tastes like the real deal- but secretly made healthy!

Ingredients in Homemade Butterfingers:

Peanut Butter- I prefer to use a natural peanut butter.

Maple Syrup or Honey- you can use either maple syrup or honey as the liquid sweetener.

Corn Flakes- if gluten free, make sure your corn flakes are certified gluten free. Most corn flakes have barley malt in them which contains wheat. I used Nature’s Path Honey’d Corn Flakes in this recipe, and loved them.

Chocolate Chips- use your favorite chocolate chips.

Coconut Oil- I prefer to use naturally refined coconut oil so there is no coconut taste or smell.

How to make Butterfinger Bites:

Crush the corn flakes: Coarsely crush the corn flakes and set aside.

Make the peanut butter mixture: Combine the peanut butter and liquid sweetener together in a medium bowl. Add the crushed corn flakes and mix together.

Form balls: Take a small cookie scoop, or 1 Tablespoon measuring spoon, and scoop and roll the dough into balls. Place on a parchment lined cookie sheet. Repeat until all the dough is rolled. Freeze the balls in the freezer until frozen.

Melt the chocolate: Right before the balls are completely frozen, melt the chocolate and coconut oil together. Dip each ball into the chocolate, coating it entirely, and letting any excess chocolate drip off. Transfer back to the cookie sheet to set. Repeat with remaining bites.

Frequently Asked Questions:

How to store healthy butterfinger bites?

I recommend storing these butterfingers bites in the fridge or freezer. That way they stay nice and crisp (and the corn flakes don’t get soggy). These bites will stay fresh in the fridge for up to 1 week or in the freezer for up to 2 months, although I doubt they will last that long, ha!
