These Homemade Breakfast Sausage are easy to make and come together quickly for a protein packed breakfast. Serve hot and fresh, or freeze them for a healthy breakfast anytime.

These Homemade Breakfast Sausage patties only require 3 main food groups- ground pork, maple syrup (or brown sugar) and spices.  They taste even better than the store bought patties without the added preservatives and weird ingredients.

I typically am not a fan of sausage, but breakfast sausage is a different story. I don’t like licorice and sausage typically has fennel seeds in it, which is the main culprit for my dislike of the meat.  These breakfast sausage patties are well seasoned without any fennel!  No fennel and a hint of sweetness distinguishes these sausage patties from typical sausage links.

Don’t like the maple and meat combo? Switch out the maple syrup for brown sugar for the same hint of sweetness that breakfast sausage is known for.

Ingredients:

Ground Pork- the best meat for breakfast sausage since it has a higher fat content. This makes the patties nice and juicy, and not dry.

Maple Syrup- use pure 100% maple syrup, not pancake syrup. Can also sub brown sugar if not a fan of maple and meat.

Spices- a blend of ground sage, thyme, salt, black pepper, garlic powder, paprika, and crushed red pepper.

How to make this Homemade Breakfast Sausage recipe:

Combine the ingredients together in a bowl: Combine ground pork and maple syrup in a glass bowl. In a small bowl, combine the spices. Add to the ground pork and maple syrup mixture. Mix well until the spices are evenly mixed throughout the meat.

Form the sausage patties: Divide the meat into 8 even portions and form patties, about 1/4″-3/8″ thick.

Cook the patties in a pan over medium heat: Preheat a skillet on medium heat.  No need to grease the pan since ground pork has a higher fat content. Once the pan is heated, place the patties in the pan.  Cook for about 4 minutes.  Flip and then cook for another 3-4 minutes or until thoroughly cooked through.

Tip for excess grease: If the patties are a bit greasy, lay on a paper towel and pat to soak up any excess grease.

Best way to serve: Serve warm or freeze for a future breakfast. Enjoy!

Refrigerator: Store up to for 4-5 days.


Freezer: Store in either a Ziploc bag or airtight container with the patties wrapped in freezer paper or squares of freezer paper in between patties to keep them from sticking together. Can be stored for up to 2 months.

  • 1/2 teaspoon ground sage

  • 1/4 teaspoon thyme

  • 1 teaspoon salt*

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon paprika

  • pinch or two of crushed red pepper

  • *I’ve tested this recipe with 1 teaspoon, 3/4 teaspoon and 1/2 teaspoon of salt. If you want to lower the salt, use 3/4 teaspoon or 1/2 teaspoon and they will still taste great!
