All summer long I get to see corn fields grow and grow until the end of summer rolls around and it’s finally sweet corn season. It also means that cooler days are coming and fall is upon us. But before fall begins, we still have a few weeks to enjoy our last days of summer and squeeze in our final bbq’s and cookouts.

It’s no secret that I love grilling and enjoy grilled foods, like my Grilled Peach Crisp. The charred flavor and the scent that comes with it- it’s one of my favorite scents. I love grilling whatever I can during the summer like meats, veggies and even some fruits too!

You can boil corn, or even microwave it in a pinch, but if you want some of the best tasting sweet corn, grill it! It brings out the natural sweet corn flavor, and adds a bit of smokiness and char to the corn. My method to grilling corn on the cob makes it so moist, and the kernels literally pop out when you bite into it!

Ingredients for Grilled Corn on the Cob:

Fresh Corn on the Cob- since I live where there’s corn fields as far as the eye can see, I have lots of fruit and vegetable stands that sell farm fresh sweet corn, and grocery stores that get fresh corn from local farms. Fresh is always best and will produce the juiciest and sweetest result, but use what you have available to you. Make sure the corn has not been husked.

Olive Oil or Butter- lightly coat the corn before we grill it with olive oil or butter. Before serving, coat in more butter or whatever toppings you would like. Can sub in plant based butter to keep this dairy free.

Salt and Pepper- enhances the natural, sweet flavor of the grilled corn.

Tools needed to make Grilled Corn on the Cob:

  • Grill
  • Large bowl or sink with a plug
  • Knife or basting brush to coat with butter or olive oil

How to Grill Corn on the Cob:

Soak: Peel back the husk on the corn and remove all silk. Fold the husks back in place and soak in water for at least 30 minutes. This will prevent the husks from burning or catching fire while on the grill, and will provide moisture for steam.

Coat and Grill: Once soaked, peel back the husks again and lightly coat in olive oil or butter. Replace the husks and grill according to the directions in the recipe card below.

How to store leftover Grilled Corn on the Cob:

Grilled Corn on the Cob can be stored in a ziploc or container in the fridge for up to 3 days. If I have any leftovers I love cutting the corn off of the cob and using them in recipes such as this Instant Pot Potato and Corn Chowder.

Ingredients

  • 4 ears of sweet corn

  • Olive Oil or butter to taste (can sub df butter)

  • Salt and pepper to taste

Directions

  • Peel back the husk on the corn and remove all silk. Fold the husks back in place and soak in water for at least 30 minutes. This will prevent the husks from burning or catching fire while on the grill, and will provide moisture for steam.
  • While the corn is soaking, preheat the grill on medium low heat until it reaches 475-500 degrees.
  • Once soaked, peel back the husks again and lightly coat in olive oil or butter. Replace the husks.
  • Grill the corn for 20 minutes, rotating every 5 minutes. Corn is done when the kernels are a deep, bright yellow.
  • Peel back the husks and coat with your favorite toppings like butter, salt and pepper.
  • Enjoy!
