This refreshing Cucumber Tomato Salad features garden fresh ingredients for a light and easy side. Fresh cut cucumbers, juicy tomatoes and tangy, crisp onions are tossed in a simple vinaigrette for this almost effortless side dish.
This salad is the easiest to make and only requires a handful of ingredients. I love using fresh tomatoes and cucumbers out of the garden to really make this Cucumber Tomato Salad fresh, but use whatever you can get your hands on!
This year, I kept my garden rather small since I had a busy start to the spring and summer season due to my wedding, but my mom gifted me two plants- one cucumber and one spicy pepper. Both are thriving and producing lots of veggies, and I had two large cucumbers that were ready to be picked. What’s a better way to use up fresh cucumbers than with this fresh veggie side dish?
The onions in this dish are totally optional. I tend to follow a low FODMAP based diet, and onions are a high FODMAP food so I try my best to stay away from them. Since this salad has larger chunks and pieces, it’s easy to pick around the onion whenever I include them.
You can also easily customize this salad by adding diced avocado or other fresh herbs and spices.

Ingredients in Cucumber Tomato Salad:
Tomato- any large tomato will work- especially fresh ones from your garden or local farmers market.
Cucumber- I picked my cucumber right off of my cucumber plant for this recipe and you could taste how fresh and crisp it was!
Red Onion- Adds some crunch and vibrancy to the dish! You can omit if preferred.
Red Wine Vinegar– adds a nice tang and flavor to the simple vinaigrette.
Olive Oil- I used extra virgin olive oil and have not tried any other oils such as avocado or grapeseed.
Salt and Pepper- add according to your preference. I like to season it and then after it’s done marinating, taste and add more right before serving.
Tools need to make Cucumber Tomato Salad:
- Cutting board – I got these bamboo cutting boards as a bridal shower gift and I use them everyday. You wash them with just soap and water so no fancy oils or cleaning products!
- Knife
- Vegetable peeler – this is the one that I have and love it. It has grips so an accident is less likely to happen (been there done that) and it slides like butter!
- Glass bowl– I used the medium bowl in this set for this recipe.
- Measuring cups and spoons
- Wooden spoon, spatula or large spoon

Once all veggies and herbs have been prepped, combine all ingredients into a bowl and mix together.

This salad is best made a few hours before serving so that everything can marinate, but you can also make it right beforehand as well.
Depending on the ripeness of the vegetables, this salad stays well in the fridge for up to 2 days if covered and sealed.

Ingredients
4 large tomatoes, washed and largely diced
1 large cucumber, peeled and largely diced into 1/2″ pieces
1/2 red onion, sliced
6 Tablespoons red wine vinegar
2 Tablespoons olive oil
Salt and pepper to taste
Directions
- Combine all ingredients in a bowl and mix together.
- Serve right away, or let marinate in the refrigerator for up to a day.
- Enjoy!
