Ingredients in this Peanut Cluster Recipe:
Peanuts- I used unsalted, dry roasted peanuts.
Semi-Sweet Chocolate Chips- use your favorite semi-sweet or dark chocolate chips.
White Chocolate Chips- use your favorite white chocolate chips. For dairy free white chocolate chips, I recommend Enjoy Like or Pascha white chocolate chips.
Peanut Butter
Caramels- this is optional, but I love how it enhances and brings a new depth of flavor that as contributes to the sweet and salty aspect of these peanut clusters. You can use your favorite brand of caramel candies. For dairy free, I like to use Cocomel’s Coconut Milk Caramels.
How to make Crockpot Peanut Clusters:
Line your crockpot with a liner, or spray with a non-stick spray to make clean up easier and to prevent burning.
Add all of the ingredients to the crockpot and place the lid on. Turn the crockpot to low and cook for 1 hour, or until everything is smooth and melted. Stir every 15 minutes.
Take a spoon or a cookie scoop, and scoop about 1 Tablespoon of the chocolate peanuts onto a parchment lined baking sheet, or into mini cupcake liners if giving as gifts. Sprinkle any toppings like flaky sea salt or sprinkles if desired. Repeat until all the peanuts have been used up. Let set on the counter for about an hour to completely set.
Frequently Asked Questions:
Peanut clusters store really well and can last up to two weeks. Store in an airtight container in a cool space, and out of any direct sunlight (or else the chocolate will melt).
You can also store these chocolate peanut clusters in an airtight container in the fridge for up to a month.
Absolutely! These candies freeze really well. After they have finished setting completely, transfer to an airtight container or freezer Ziploc. I like to separate the rows by parchment paper so none of them stick together.
When thawing, thaw in the fridge first and then bring to room temperature to minimize any condensation from the changing of temperatures.
Either salted or unsalted peanuts will work. I like to use unsalted and then top these chocolate peanut clusters with flaky sea salt so that I can control how much salt is in them. If you use salted, I would recommend using lightly salted peanuts.
No worries! You can also use wax paper or a silicone baking mat.
