Creamy Tomato Soup (Dairy, Egg and Gluten Free)

This homemade creamy tomato soup is easy to make and deliciously creamy. The taste will take you right back to childhood. Just pair with toast or dairy free grilled cheese for the ultimate combo!

Who else remember’s eating grilled cheese and tomato soup when they were a kid? 🙋🏼‍♀️I remember going over my best friend’s grandmother’s house, and she would always make us a grilled cheese sandwich with tomato soup. It was one of my favorite comfort meals. So simple, yet so satisfying.

This tomato soup is so creamy all while being dairy free. It comes together quick and easy, and you might just have all the ingredients already in your pantry!

I love toasting some gluten free bread and spreading some dairy free Earth Balance butter on top. It’s a great side to this soup, and can be easily dunked. Yum!

I also love making a dairy free and gluten free grilled cheese to go with the soup. Seriously what’s a better side to tomato soup than grilled cheese?! I have tried so so soooo many brands of dairy free cheese, and I can honestly say that I swear by Good Planet. It not only tastes JUST like normal cheese, but it functions like it too! It not only comes in shreds, which I use in the soup, but it comes in slices which are perfect for grilled cheese!

Ingredients:

Olive Oil

Yellow Onion

Whole Tomatoes Steam Peeled

Diced Tomatoes

Almond Milk– I use almond milk, but you can use any nut milk.

Coconut Sugar

Dairy-Free Parmesan Cheese- I swear by and love Good Planet. The very best dairy free cheese on the market.

Salt and Pepper

Fresh Basil– I cut a stalk from my herb garden! Nothing like using fresh herbs from your own garden.

How to make:

Dice

Add the olive oil to a cooking pot and heat up on medium heat. Dice yellow onion.

Sautée

Add diced onion to the olive oil and sautée.

Blend

Add diced tomatoes, whole tomatoes, sautéed onions and fresh basil to blender, and blend until creamy and no chunks remain.

Simmer

Return blended soup to the cooking pot and add almond milk, coconut sugar, parmesan cheese, salt and pepper. Let simmer for 15 mins on medium low heat.

Ingredients

  • 2 Tablespoons Olive Oil

  • 1 Medium Yellow Onion

  • 1 28oz can Whole Tomatoes Steam Peeled

  • 1 14oz can diced tomatoes-drained

  • 3 leaves of fresh basil

  • 1 1/2 cup almond milk

  • 3-4 Tablespoons Coconut Sugar

  • 1/3 cup Dairy Free Parmesan Cheese- I love Good Planet!

  • Salt and Pepper to taste

  • *Optional- Fresh diced basil as garnish

Directions

  • Add olive oil to a cooking pan and heat on medium. Dice onion and add into the cooking pan. Sautée until tender.
  • Add whole tomatoes, diced tomatoes, sautéed onion and fresh basil in a blender and blend until creamy. Add back into cooking pan.
  • Add the almond milk, coconut sugar, parmesan cheese, salt and pepper to the soup and simmer for 15 mins on medium low.
  • Spoon into a bowl and top with more parmesan cheese and fresh basil if you wish! Enjoy!
