Cranberry Lime Mimosas

Enjoy this festive Cranberry Mimosa this holiday season. Also known as a Poinsettia Cocktail, this mimosa is made with just cranberry juice, sparkling wine and a hint of lime for the ultimate holiday drink.

This fun Christmas Mimosa isn’t made with the typical orange juice that is found in a standard mimosa, but rather with cranberry juice.

This cocktail is also known as a Poinsettia, which is very fitting for Christmas time (and adorable!), and only has two main ingredients- sparkling wine and cranberry juice.

I love adding fresh lime juice because it complements the cranberry so well. Top off with sugared cranberries and a sprig of rosemary and you’ve got yourself an easy drink to serve up around the holidays!

I made a big batch of this for Thanksgiving but I made it into a mocktail so all ages of our family could enjoy. All I did was sub in sparkling white grape juice for the wine and it turned out so good! I also froze some of the cranberry juice to keep the drink cold without watering it down. Highly recommend!

Ingredients in Cranberry Mimosas:

Sparkling Wine- you can use champagne or Prosecco. I went with a Prosecco since it’s more budget friendly. You can sub sparkling white grape juice to make this drink into a mocktail as well- it’s just as yummy!

Cranberry Juice- make sure to use 100% cranberry juice and not cranberry juice cocktail.

Fresh Lime- squeeze fresh lime juice into these mimosas for the perfect amount of zest.

Sugared Cranberries and Fresh Rosemary- for garnish. Also known as frosted cranberries. I also sugared the rosemary because I love the look of the frosted leaves.

Tools needed to make Cranberry Lime Mimosas:

  • Champagne flutes- If it was just my husband and me and we didn’t have guests, I would totally make these drinks in mason jars too haha!
  • Glass jar dispenser or pitcher- I love using this dispenser when I am making a large batch for a gathering. I will double or triple the recipe and it’s great for holiday parties or for hosting.
  • Cutting board and knife- to slice the lime.

How to make a Poinsettia Cocktail:

Champagne Flutes: I like to use a 2:1 ratio or a 50/50 ratio with equal parts of sparkling wine to cranberry juice. Fill the champagne flutes up 1/2 to 2/3 with the sparkling wine. Top with cranberry juice. Squeeze a slice of lime juice into the flute. Garnish with sugared cranberries and a sprig of rosemary.

Pitcher or Large Glass Dispenser: Add the bottle of sparkling wine to the dispenser. Add the cranberry juice and then the lime juice. Serve and garnish with sugared cranberries and a sprig of rosemary.

Tips for making Cranberry Lime Mimosas:

  • You can use any sparkling wine in this recipe such as champagne or Prosecco. I like to use Prosecco or even sparkling white grape juice because it’s more budget friendly, especially if you’re doubling or tripling the recipe for a large gathering.
  • Feel free to adjust the ratio of wine to cranberry juice to your liking.
  • Add the sparkling wine first and then the cranberry juice. This way the drink mixes itself and you don’t have to worry about the champagne overflowing.
  • I love making my own frosted cranberries and frosted rosemary and adding as a garnish. Not only are they pretty, they add some more sweetness (which is my preference), and the rosemary adds a nice, subtle taste.
  • When serving in a pitcher or dispenser, I like to make cranberry juice ice cubes so it keeps the drink cold without watering it down.
