These Chocolate Peanut Butter Gluten Free Ritz Cookies are so simple and easy to make, but highly addicting! A peanut butter filling is sandwiched by two gluten free ritz crackers and then dunked in chocolate. This sweet and salty snack has the perfect crunch and the perfect balance of chocolate and peanut butter.

Ingredients in Chocolate Ritz Peanut Butter Cookies:
Gluten Free Ritz Crackers- I use and love Schär’s Entertainment Crackers. They’re just like Ritz crackers but gluten free. If not gluten free, you can use regular plain Ritz crackers.
Peanut Butter- use your favorite peanut butter here. We’re also adding a bit of peanut butter to the chocolate for the perfect chocolate peanut butter combo!
Maple Syrup- you can also use honey or agave.
Chocolate Chips- use your favorite chocolate chips, dairy free if needed.
Tools needed to make Chocolate Peanut Butter Ritz Cookies:
- Baking sheet
- Parchment paper sheets
- Glass bowl
- Rubber spatula
- Butter knife or small rubber spatula for spreading the peanut butter onto the cracker
- Glass bowl or sauce pan for melting chocolate
- Fork
How to make Ritz Peanut Butter Chocolate Cookies:
Assemble the cookies: Lay out the ritz crackers top-side down on a baking sheet. Mix together the peanut butter and maple syrup in a glass bowl. Place and spread 1/2 Tablespoon of peanut butter onto half of the crackers. Place a plain cracker on top of the peanut butter ones and gently push down until the peanut butter is just at the edges. Repeat with all crackers until they are all assembled. Place in the fridge to chill the peanut butter, about 20-30 minutes depending on how runny your peanut butter is.
Melt the chocolate: While the cookies are chilling, melt the chocolate and peanut butter by your preferred method.
Dip the cookies: Using a fork, dip the ritz cookie in the chocolate until the entire cookie is covered. Let any excess chocolate drip off and gently slide the bottom of the fork, with the cookie on top, against the rim of the bowl to get the rest of any excess chocolate off (as seen in the video). Place back on the baking sheet and repeat until all cookies have been covered. Chill in the fridge until set, about 30 minutes.
Tips for the best Chocolate Ritz Peanut Butter Cookies:
- If you use natural peanut butter, it will normally be more runny than “normal” peanut butter. If your peanut butter is too runny and running off the crackers, try to add 1 Tablespoon of coconut flour to make it more malleable without jeopardizing the flavor.
- If you have any leftover peanut butter chocolate, I love making homemade chocolate peanut butter hot chocolate by mixing a bit of the melted chocolate into warm almond milk. It’s delicious!
- You can top these cookies with flaky sea salt, peanut butter drizzle, chocolate drizzle, crushed peanuts, or sprinkles.

These Chocolate Peanut Butter Gluten Free Ritz Cookies are so simple and easy to make, but highly addicting! - 2 Tablespoons peanut butter
