These Bunny Tail Rice Krispie Muddy Buddies consists of a gooey Rice Krispie treat that’s coated in chocolate peanut butter, and then tossed in powdered sugar. These muddy buddy marshmallow treats are perfect for adults and kids, and taste like a candy bar!

Ingredients in Rice Krispie Muddy Buddies:

Rice Krispie Cereal- if you need these treats to be gluten free, make sure you check that your cereal is certified gluten free. Name brand Rice Krispies are NOT gluten free- they contain barley malt which is related to wheat and those who are gluten free or have Celiac’s should stay away from it. I have found that some off brands are certified gluten free, like Aldi’s Crispy Rice cereal. Plus it’s a great price so it’s a win win.

Marshmallows- I used the regular sized marshmallows. If gluten and dairy free, just make sure your marshmallows are labeled so.

Butter- you can use regular or dairy free butter.

Vanilla- vanilla extract really kicks up the flavor of the Rice Krispie treat!

Chocolate- use your favorite chocolate here. I used dairy free semi sweet chocolate chips, but you can also use milk or dark chocolate.

Peanut Butter- use your favorite peanut butter here- the smoother the better!

Powdered Sugar- this is what makes them look like bunny tails! And taste super amazing too 🙂 These can get a bit messy to eat, but believe me, they are so worth it.

Tools needed to make Rice Krispie Muddy Buddies:

  • Measuring cups and spoons
  • Pot or glass bowl to melt the marshmallows in, I really prefer to melt them in a pot on the stove rather than the microwave.
  • Large cookie scoop or 1/4 cup measuring cup
  • Cookie sheet
  • Parchment paper sheets– I highly suggest using parchment paper because the Rice Krispies don’t stick to it at all!
  • Glass bowl or double boiler to melt the chocolate and peanut butter
  • Large bowl
  • Rubber spatula
  • Gallon Ziplocs- I find that it’s easiest to coat the bunny tails in powdered sugar by using a ziploc rather than rolling them in the sugar by hand. It’s less messy too!

How to make Bunny Tail Rice Krispie Muddy Buddies:

Make the Rice Krispie Treat Balls: Melt the butter in a large pot over medium heat. Once melted, add the vanilla extract and mix together. Add the marshmallows to the pot and melt over medium heat, stirring constantly. Once smooth and melted, add the rice crispy cereal. Mix altogether.

Taking a large cookie scoop, or a 1/4 cup measuring cup, scoop the Rice Krispies and roll into balls. You will need to wet your hands with water to keep them from sticking to your hands. I found that I could roll about 5 of them before I had to re-wet my hands. Let the Rice Krispies set up for 30 mins at room temperature.

Cover in Chocolate Peanut Butter: Melt the chocolate and peanut butter by your preferred method. Add the Rice Krispie balls to a large bowl (I like to do this in two or three batches). Pour half (or a third if your doing three batches) of the chocolate peanut butter on top of the Rice Krispie balls. Use a rubber spatula to mix the chocolate and evenly coat the Rice Krispies.

Tip: the longer you mix the balls in the chocolate, the more even of a coat the balls will have. It may look like there’s not enough chocolate, but the more you mix the more they will get evenly coated.

Coat in Powdered Sugar: Add the chocolate covered Rice Krispie balls to a gallon sized Ziploc (again, I like to do this in two to three batches so it’s more easy to work with since this recipe makes so many servings). Add the powdered sugar (half or a third depending on how many batches) and close the ziploc. Gently shake the bag, coating each ball in powdered sugar. Transfer back to the cookie sheet. Repeat with each batch.

Set: Leave the bunny tails on the cookie sheet for at least 30 minutes so that the chocolate can set.

How to store Muddy Buddy Rice Krispie Treats:

These treats can be stored in a sealed container or ziploc at room temperature for up to 5 days.  Room temperature is key as it keeps the Rice Krispie portion nice and gooey. 

Can I freeze these treats?

Yes! These stay good in the freezer for up to 2 months.

Why are these called Bunny Tails?

I’m calling these bunny tails due to the round Rice Krispie treats and the fluffy powdered sugar, they look like cute, fluffy and white bunny tails!

Can these be made dairy and gluten free?

Absolutely! These bunny tails can easily be made regular or entirely gluten and dairy free. Just be sure that your Rice Crispy cereal that you use is labeled gluten free. Name brand Rice Krispies are not gluten free- it has barley malt in the ingredients which is a derivative of wheat. I like to use Aldi brand which is labeled gluten free. Also double check your marshmallows to make sure they have no wheat or gluten.

To make these bunny tails dairy free, just use dairy free butter and your favorite dairy free chocolate chips.

  • 20 oz regular sized marshmallows
  • 1 teaspoon vanilla extract
  • 12 oz Rice Krispie cereal, gluten free if desired

Muddy Buddy Layer

  • 2 cups chocolate chips, dairy free or regular
  • 1/2 cup peanut butter
  • 2 cups powdered sugar
