Reasons to love Bacon Wrapped Asparagus Bundles:
- Delicious appetizer or side dish
- 3 main ingredients- plus salt and pepper
- Can be made in the oven or on the grill
- Naturally dairy and gluten free
Ingredients for Asparagus Bundles:
Asparagus- make sure to use fresh asparagus.
Bacon- use your favorite kind! The thinner the bacon, the crispier it’ll get.
Extra Virgin Olive Oil- I like to use EVOO but avocado oil would also work here.
Salt and Pepper
Tools needed to make Bacon Wrapped Asaparagus:
- Paper towels/dish towel to dry asparagus
- Cutting board and knife
- 8×8 pan, or larger- just to toss the asparagus in olive oil, salt and pepper.
- Baking sheet– I prefer to use a baking sheet that has a rim so that no juices or oils run off the pan.
- Parchment paper sheets
How to make Bacon Wrapped Asparagus Bundles:
Rinse the asparagus and then pat dry with a paper towel or kitchen towel. Trim the tough ends (the woody part), about 1-1 1/2 inch.
Place the asparagus in an 8×8 dish (or any size that they will fit in and you have room to move them). Drizzle with olive oil and then season with salt and pepper. Toss them to evenly coat.
Divide the asparagus into groups of 5 (the last group might have a bit under or over).
Wrap a slice of bacon around each group starting about a 1- 1 1/2 inches from the top.
Transfer to a parchment lined baking sheet. Repeat until all bundles have been wrapped. Season with additional salt and pepper (just keep in mind the amount of salt you add if your bacon is already on the salty side).
Bake for 15-20 minutes, until the bacon is cooked and the asparagus is tender. Broil for an additional 2-3 minutes until the bacon is crispy.
Frequently Asked Questions about Bacon Wrapped Asparagus Bundles:
If you like your bacon crispy, use thin sliced bacon. I’ve made this with thick-cut bacon as well, and the bacon isn’t as crispy (but I love my bacon in between) but just as delicious! If you only have thick-cut bacon but want crispy bacon, you can partially cook the bacon before wrapping the asparagus.
When the asparagus is done cooking, it should be tender and also a deeper green. The tips will be golden and crispy. The longer the asparagus cooks in the oven, the crispier the tips will be.
These bundles can be stored for up to 2 days in the refrigerator. For best results, heat up in the oven or a skillet.
Yes! Grilled asparagus is one of my favorite foods, and with the addition of bacon, this side dish is out of this world amazing. I like to grill these bundles on tin foil so the asparagus does not burn. Make sure to flip halfway through as well so both sides get evenly cooked.
