This Autumn Harvest Sheet Pan Dinner showcases delicious seasonal produce roasted with kielbasa all on one pan to create an easy and quick dinner with little clean up.
Tray bakes are one of my favorite dinners to make for various reasons. Not only can you customize them really in any way, you can use up your “about to go bad” produce so there’s no waste. Oh, and its made all on one tray, making clean up super easy and quick.
I used kielbasa for this tray bake, but feel free to use any protein you want. You can use sausage, chicken, pork, steak-whatever you’re feeling or have on hand!

Ingredients in Autumn Harvest Sheet Pan Bake:
Kielbasa- I used a pork kielbasa in this recipe. Feel free to change up the protein. The flavor of the kielbasa paired really well with all the seasonal autumn produce.
Butternut Squash
Brussel Sprouts
Apple- I used whatever apples I had on hand.
Bacon- if you are gluten free, make sure your bacon is certified gluten free. Even if it doesn’t say it in the ingredients, it could be used in processing the bacon as an anti-sticking agent.
Extra Virgin Olive Oil
Spices- Salt, pepper, thyme, paprika, rosemary and sage
Dried Cranberries– optional, but I love topping this bake with dried cranberries. They paired so well with the other ingredients and gave a nice sweetness that wasn’t overpowering.
Tools needed to make this autumn sheet pan dinner:
- Measuring cups and spoons
- Cutting board and knife
- Baking sheet– make sure it has “walls” so any juices don’t fall off in the oven
- Tin foil
- Cooking spray- I love using an olive oil, coconut oil, avocado oil or grapeseed oil spray as opposed to regular canola oil.
- Spatula or wooden spoon
- Kitchen scissors- one of my most used kitchen gadgets
How to make this fall sheet pan dinner:
Prep the tray bake: Add the kielbasa, butternut squash, brussel sprouts, and apple to the baking sheet. Drizzle the olive oil, and then add the spices. Mix together so everything is evenly coated. Cut the bacon and place on top of the other ingredients. By keeping it on top, the bacon grease is going to cover the rest of the ingredients and give it some serious flavor!
Bake and top: Bake according to the directions below in the recipe card. Top with dried cranberries.

You can store leftovers in the fridge for up to 3-4 days. I love reheating this tray bake in a skillet, but you can also reheat in the microwave.

Ingredients
13 oz kielbasa, sliced into 1/4″ slices
3 cups butternut squash, peeled and largely diced into 3/4″ cubes
1 cup brussels sprouts, halved
2 medium apples, peeled and medium diced into 1″ cubes
2 Tablespoons of olive oil
1/2 teaspoon thyme
1/2 teaspoon paprika
1/4 teaspoon rosemary
1/4 teaspoon sage, I used ground sage
Salt and pepper to taste
2 slices of bacon, cut into 1/2″ pieces
Dried cranberries for topping
Directions
- Preheat oven to 425 degrees.
- Add the kielbasa, butternut squash, brussel sprouts, and apple to the baking sheet. Drizzle the olive oil, and then add the spices. Mix together so everything is evenly coated. Cut the bacon and place on top of the other ingredients. (By keeping it on top, the bacon grease is going to cover the rest of the ingredients and give it some serious flavor!)
- Bake for 30-40 minutes or until everything is cooked through and roasted.
- Top with dried cranberries.
