Instant Pot Buttery Tomato Pasta (Dairy and Gluten Free)

This Instant Pot Buttery Tomato Pasta uses few ingredients and comes together in only 25 minutes from start to end! It’s bursting with flavor and can be made gluten free and vegan.

As an Italian, pasta is a weekly or even semi weekly meal in my house, but I’m not one that loves red sauce.  In fact, it’s the only food that gives me heartburn, so I like to experiment with different pasta dishes and sauces.  It also keeps dinners exciting and fresh when pasta is a such a staple and reoccurring meal.

This buttery tomato pasta only uses diced tomatoes, so no heavy red sauce!  It’s light, but bursting with flavor from the vegetable broth and spices.  You can also add a protein source, such as chicken, or throw in some spinach to welt at the end to make it a complete meal. I bet you already have all the ingredients in your pantry as well.  There’s few ingredients and they’re all pantry or fridge staples! It’s a great weeknight meal to throw together when your fridge is bare, but your pantry is stocked. It’s simple and quick to make, but does not lack in flavor.

Ingredients:

Penne Pasta– can be made with normal or gluten free pasta.  If you use a different pasta other than penne, I cannot guarantee the cook time is the same.

Vegetable Broth- the liquid that cooks the pasta. Gives it flavor (water would be less flavorful) and provides the base for the buttery tomato sauce.

Diced Tomatoes I use the can of diced tomatoes that also have basil, garlic and oregano.  Makes your life easier and quicker!

Salt- ties all the flavors together.

Dairy Free Butter I love and use Earth Balance vegan butters.  For this recipe I used these vegan butter sticks and I just cut the amount I needed.

Granulated Sugar- takes the acid out of the tomatoes.  You can use cane, brown or coconut sugar.

Extra Virgin Olive Oil keeps the pasta from sticking together while it is cooking.

Tools you’ll need to make this pasta dish:

  • Instant Pot – this is the one I use and I love all the features of it! For this recipe, you only need to use the pressure cook button.
  • Wooden Spoon
  • Serving Spoon

How to make this Instant Pot Buttery Tomato Pasta:

Pour

Pour all the ingredients into the Instant Pot.  Give it a good stir.

Close and Seal

Plug your Instant Pot in.  Close the lid until the jingle.  Make sure the valve is turned towards sealing and NOT venting.

Cook

Press the pressure cook button and set the timer to 3 minutes on high pressure.

Realeasing

Once it’s pressurized the timer will countdown.  Once it hits zero you can naturally release it or manually release it.  To naturally release it, you do not need to do anything, just let the steam come out on its own.  To manually release it, quickly and carefully turn the valve to venting (the steam comes out fast and hot!)

Open and Store

Once the steam has stopped you can open the lid and give the pasta a good stir. Top with your favorite dairy free parmesan cheese or your favorite pasta toppings.
