Chunky Monkey Gluten Free Waffles (Vegan)

These chunky monkey waffles are gluten free, vegan and bursting with banana flavor! These waffles make the perfect breakfast and only contain 8 simple ingredients.

Are you a pancake or waffle person? I love both, but I would choose waffles if I had the choice. I love the texture and the crispiness. Plus there’s little holes for all the buttery and syrupy goodness! 🤤 But what’s better than waffles? MINI WAFFLES!

Cute, sweet and perfect for breakfast! But no worries, if you don’t have a mini waffle iron, these can be made in a normal one too! Follow the directions exactly the same except for the amount of batter you put in the waffle iron.

These chunky monkey waffles are not only vegan and gluten free, but also refined sugar free! You could also emit the coconut sugar to make these naturally sweetened by banana- I’ve tried it and sometimes I’m in the mood for less sugar and sweetness. Especially if you drizzle maple syrup.

Ingredients

Bananas- puts the chunky in chunky monkey 😉 the banana helps bind the waffles together, and also adds flavor and sweetness.

Flax Egg- combine 1 Tablespoon ground flax seed with 2.5 Tablespoons warm water. Set in the fridge for 10 mins.

Pure Vanilla Extract– I use and love this one. The Madagascar vanilla has a powerful vanilla flavor that complements any baking. It’s a little pricey but lasts me awhile, even with all the baking and recipe testing I do!

Coconut Sugar– provides the extra added sweetness without refined sugar. Also adds another depth of flavor to these waffles.

Almond milk– or any nut milk you prefer!

Oat flour– I always make my own from blending these Trader Joe’s Rolled Oats until they reach a super fine consistency. Make sure you use certified gluten and wheat free if gluten free to avoid cross contamination.

Baking Powder– allows the waffles to rise

Salt– adds and ties all the flavors together

How to make:

Preheat

Preheat your waffle iron.

Mash

Mash the banana in a medium bowl and add the flax egg, vanilla extract, coconut sugar and almond milk. Mix thoroughly.

Add

Add the oat flour, baking powder and salt to the wet ingredients. Mix until incorporated.

Scoop

Scoop the batter onto the waffle iron and close. Follow the cooking directions of your waffle iron. This is the exact one that I use!

Tip for the perfect waffle:

Not all batters are created equally meaning times may vary based on the batter. To ensure a perfectly cooked waffle that is crispy and golden, instead of taking the waffle out once the done light has turned on, wait until there is no steam coming out of the waffle. Once there is no steam coming from the waffle, take it out of the iron and you have yourself a waffle that is cooked to perfection!

Toppings

Toppings for pancakes and waffles are almost as important as the batter itself! I love topping with Earth Balance Vegan Butter Sticks. Not only can you use this butter as a spread, but it comes in “normal” butter packaging with markings for Tablespoons. This is great and convenient for any recipe! I have used this vegan butter for years now and it is so stinkin good! Tastes just like butter and can be used in replacement of real butter in any recipe.

I also love topping my waffles with fresh, local maple syrup. I am very fortunate that maple syrup is prevalent in my area and I love supporting local farms and businesses.

Crushed nuts

Flax or chia seeds for an added pack of protein and fiber.

  • Wet Ingredients

  • 1 1/4 cup oat flour- I love making my own in a blender by blending these Rolled Oats until they reach a super fine consistency

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Directions

  • Preheat waffle iron.
  • Mash the banana in a medium bowl and add the flax egg, vanilla extract, coconut sugar and almond milk. Mix thoroughly.
  • Add the oat flour, baking powder and salt to the wet ingredients. Mix until incorporated.
  • Scoop the batter onto the waffle iron and close. Follow the cooking directions of your waffle iron. Take out of waffle iron until there is no more steam coming from the waffle.
  • Top with your favorite toppings and enjoy!
