Need a quick treat to make for Memorial Day, or any American holiday? These Red, White and Blue Pudding Cups are easy and delicious to make. Everyone will love them even if they aren’t dairy or gluten free because you really cannot tell the difference!

How to make dairy free pudding:

If you’re thinking to yourself, how can pudding be dairy free? Then I’ve got your back because yes, yes it can be. Even with a box mix? Yep! I’ll show you!

The trick is to use Cook and Serve pudding mix, NOT instant pudding. It will not work or set with Instant Pudding. And trust me, the Cook and Serve is still really fast to make. The key is only starting out with adding half of what the box calls for milk. I typically use almond milk, but I’m sure other kinds would work too. Start with half of what it calls for, and if you want it more runny and less thick, add in a little bit more until you reach your desired consistency.

And there you have it! Dairy free pudding with regular ole’ pudding mix. I’ve made it so many times and it’s come out perfect each time. I’ve tried it with both chocolate and vanilla, each with great success every time.

Ingredients in these Pudding Cups:

Goodie Girl Birthday Cake Cookies I first had these cookies about a year ago when David and I went to a local beach for a day. I was browsing at the store and saw these and couldn’t believe they were gluten, dairy and egg free. And then I tried them and HOLY COW. They’re even better than Oreos and best yet? They have edible glitter in the creme filling. Seriously the cutest and the yummiest. You could also sub gluten free graham crackers or even gluten free vanilla wafers like these.

Cook and Serve Pudding Mix- we’re using vanilla here to get the white in Red, White and Blue, but you can also use chocolate if you’re feeding some chocolate lovers. Side note: since we are only adding half of what the box calls for milk, the pudding is a tad bit more on the yellow side. But I promise it still tastes great.

Almond Milk- I prefer to use unsweetened almond milk to make the pudding mix, but you’re favorite non-dairy milk should also work.

Fresh fruit- use your favorite red and blue fruit. I love using strawberries and blueberries and even raspberries or black raspberries too!

So Delicious Coco Whip- this is my favorite non-dairy cool whip. Same consistency as cool whip and is a great 1:1 replacement for cool whip. I find it in the freezer section of my local Wegmans. You can use regular or their light version.

Tools needed to make Red, White and Blue Pudding Cups:

  • Measuring cups
  • Non-stick sauce pan– this is the exact set that I have. My mother in law got this Cuisinart Pot and Pan set for us as a wedding gift and I love it. It truly is non-stick and so, so easy to clean. Melted cheese, melted chocolate, seriously ANYTHING comes right off just with warm water and a sponge (I like to get everything off first with just water and then I go in with soap to clean and sanitize).
  • Whisk
  • Glass bowl
  • Plastic wrap
  • Cutting board– I got these bamboo ones as a wedding gift and just love using them. Best part? You clean them with just soap and water so there’s no special (or expensive) cleaning product to use on them.
  • Wooden spoon and a Ziploc to crush the cookies
  • Knife to cut up strawberries
  • Mason Jars (I used these 8 oz ones) or plastic cups like these if there’s going to be kiddos
  • Large cookie scoop

How to make this Patriotic dessert:

Make the pudding: In a non-stick sauce pan, heat up the almond milk and then add the pudding mix. Combine with a whisk. Bring the pudding to a boil, stirring continuously. Cook for 1 minute at a boil, or until your desired pudding consistency has been reached, and then transfer to a glass bowl. Cover the surface of the pudding with plastic wrap and chill in the fridge.

Crush the cookies: Place the cookies in a Ziploc bag and crush them with a wooden spoon until they are crushed into small/fine pieces. I found that blending them in a blender, made them too fine and almost like a paste because of the creme filling. I preferred the texture of crushed pieces in these pudding cups because they provided more of a crunch which paired great with the smooth pudding.

Assemble the cups: Add 1-2 Tablespoons of Goodie Girl Birthday Cake Cookie crumbs to the bottom of the cup. Next add a scoop of pudding mix using a large cookie scoop. Layer with blueberries and strawberries. Repeat until you have reached the top, leaving room for one layer of Coco Whip and some additional blueberries and strawberry slices.

These Pudding Cups can be made the day before and kept in the fridge, or a few hours before and kept in the fridge. Make note, if its more than a couple of days, the cookie crumbs will become soggier and mushier because of the liquid and moisture in the pudding.

  • 1 1/2-3/4 cup almond milk, or your favorite non-dairy milk

  • Crushed Cookies
  • 11 Goodie Girl Birthday Cake Sandwich Cookies, crushed

  • Fresh Fruit
  • 1/2 cup blueberries

  • 1/2 cup strawberries, diced

  • Topping
  • So Delicious Coco Whip

  • Blueberries and strawberries

Directions

  • In a non-stick sauce pan, heat up the almond milk and then add the pudding mix. Combine with the whisk. Bring the pudding to a boil, stirring continuously. Cook for 1 minute at a boil, or until the pudding consistency has been reached, and then transfer to a glass bowl.
