Banana Stuffed Pancake Bites

These Banana Stuffed Pancake Bites are not only kid friendly, but quick and easy to whip up. They are a great breakfast or snack option, and can be made gluten free, dairy free or vegan.

I’ve been seeing this concept of bite-sized pancakes with a slice of banana in them going around and decided to do my own take on them!

I made them gluten free and vegan instead of using a normal pancake mix. I decided to use Bob’s Red Mill Gluten Free Pancake Mix since its gluten free and I made a few substitutions to make it vegan.

On the back of the package, there is a recipe for pancakes. I followed the measurements exactly and just made it dairy and egg friendly. I substituted dairy free butter for regular butter, one flax egg for one regular egg, and almond milk for regular milk. It came out so delicious I loved it! I’ve used this mix so many times before and it really is great since you can use the gluten free mix as is if you’re only gluten free, or you can use 1:1 substitutions to make it just dairy free or vegan and it still comes out great!

I love banana pancakes for a variety of reasons. You can naturally sweeten pancakes with just the banana, its a great way to get you’re fruit and potassium in, and it the banana flavor pairs so well with other flavors. Like chocolate (you can add cocoa powder but I love adding a scoop of my chocolate protein powder to my pancakes for an added protein boost), peanut butter, chocolate peanut butter, other fruit, etc.

Instead of mashing banana, why not stick a whole slice in the middle of the pancake? These Banana Stuffed Pancake Bites are literally bursting with fresh banana flavor. And they’re mini! Its a great recipe for kids and adults alike, and not only a good breakfast option, but for a snack too since they’re bite sized.

Best Toppings for Banana Stuffed Pancake Bites:

  • Pure maple syrup- not pancake syrup!
  • Agave
  • Honey
  • Peanut butter- I love either drizzling runny peanut butter on top, or dipping them in peanut butter.
  • Jam
  • Butter- regular or dairy free butter
  • Mini chocolate chips- like these allergy friendly ones
  • Granola- like this homemade Peanut Butter Cookie Granola. Peanut butter and banana? Who can say no to that.

Ingredients to make Banana Stuffed Pancake Bites:

Bob’s Red Mill Gluten Free Pancake Mix– such a versatile mix. You can make pancakes or waffles with it, and you can make substitutions to make it dairy free or vegan.

Butter- I used Country Crock’s Plant Butter in replacement of regular melted butter.

Flax Egg- if you can have eggs feel free to use a regular egg. If you’re like me and can’t, then combine 1 Tablespoon of ground flaxseed with 2.5 Tablespoons of warm water to create a flax egg. I like to stick mine in the fridge for 5-10 minutes to gel up.

Milk- I used almond milk in replacement of regular cow’s milk, but use your favorite kind.

Banana- I used slightly spotted ripe bananas, since spotted are my favorite kind, but use what you love! If you love green bananas, then you can use them in this recipe as well.

Tools needed to make Banana Pancake Bites:

  • Measuring cups
  • Glass bowl
  • Whisk, silicone spatula or wooden spoon
  • Fork or this truffle set
  • Frying pan– this is the exact set that I have. My mother in law got this Cuisinart Pot and Pan set for us as a wedding gift and I love it. It truly is non-stick and so, so easy to clean. Melted cheese, melted chocolate, seriously ANYTHING comes right off just with warm water and a sponge (I like to get everything off first with just water and then I go in with soap to clean and sanitize).
  • Spatula for flipping the pancakes- make sure you use silicone and not metal so your pan doesn’t get scratched!

How to make Pancake Bites that are stuffed with Banana:

Make the pancake mix: Add Bob’s Red Mill Gluten Free Pancake Mix to a glass bowl. Add the rest of the ingredients that the package calls for, making 1:1 substitutions as necessary.

Slice, dip and cook: Slice the banana into 1/4″ slices and individually dip them into the pancake batter. Make sure the entire banana slice is covered in pancake mix. Transfer to a preheated frying pan. Cook according to the directions below in the recipe card.

These pancake bites are best served fresh, but can stored in the refrigerator for up to 2-3 days. Best way to reheat is in a frying pan, flipping hallway through to ensure even heating.

  • Add Bob’s Red Mill Gluten Free Pancake Mix to a glass bowl. Add the melted butter, egg and milk. Mix until just combined.
  • Preheat a frying pan on low-medium heat.
  • Slice the bananas into 1/4″ thick slices.
  • Dip into the pancake batter, making sure the entire slice is covered.
  • Transfer to the preheated frying pan. Cook for 1-2 minutes, or until golden. Flip and cook for an additional 1-2 minutes.
  • Top with your favorite toppings. Enjoy!
