These 3 Ingredient Chocolate Pumpkin Cookies are made with chocolate cake or brownie mix, pumpkin and chocolate chips. So easy to make, these cookies can easily be made entirely gluten, dairy and egg free.

These cake mix cookies are so good, and so, so easy to make.

In fact, you probably already have all of the 3 ingredients on hand- chocolate cake mix or brownie mix, a can of pumpkin, and chocolate chips. Yep that’s it!

This recipe can easily be made with a regular cake or brownie mix and regular chocolate chips, but I made it with a gluten and dairy free cake mix and dairy free chocolate chips. Same recipe and directions, and you get the same delicious cookies either way!

Ingredients in Chocolate Pumpkin Cake Mix Cookies:

Chocolate Cake Mix or Brownie Mix- you can use regular or gluten free mix. If dairy free, watch out for dairy in the cake mix itself.

Pumpkin- use 100% pure pumpkin.

Chocolate Chips- regular or your favorite dairy free ones.

How to make Chocolate Pumpkin Cookies:

Mix: Mix the cake or brownie mix and can of pumpkin together until combined. Fold in the chocolate chips.

Scoop and bake: Using a medium cookie scoop, scoop the dough and roll into a ball between your hands. Place onto a parchment line baking sheet. Bake according to the directions below in the recipe card.

These cookies can be stored at room temperature for 3 days, refrigerated for a week or frozen for 2 months.

These 3 Ingredient Chocolate Pumpkin Cookies are made with chocolate cake or brownie mix, pumpkin and chocolate chips. So easy to make, these cookies can easily be made entirely gluten, dairy and egg free.

Ingredients

  • 1 box chocolate cake mix or brownie mix, regular or gluten free*

  • 1 15 oz can pumpkin puree

  • 1 cup chocolate chips

Directions

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the cake or brownie mix and pumpkin together until combined. Fold in the chocolate chips.
  • Using a medium cookie scoop, scoop the dough and roll into a ball between your hands. Place onto a parchment lined baking sheet. Press a few chocolate chips on top of cookies if desired.
  • Bake for 12-15 minutes, or until the middle of the cookie isn’t shiny. Cookies will be softer and not crispy.
  • Let cool for 5 minutes before transferring to a cooling rack.
  • Enjoy!

  • *I have used both a 15 oz cake mix and a 10 oz cake mix (often times there’s less quantity in gluten free mixes). Both work, I used a little less pumpkin with 10 oz mix.
